Our Story

We all have been consumed by the comfort of a burger as the reassurance of fulfilling our hunger when away from home. While living in America, I worked at the Taste of Chicago in Millennium Park. Here I developed an obsession with finding the perfect burger. This led me to food festivals in San Francisco, New York, Atlanta and Las Vegas. As time went by, I accumulated an archive of top quality burger styles, types and cooking methods I thought were amazing. When I returned home to Ireland we were at the beginning stages of a recession. With the likelihood of unemployment on the horizon, I made a dramatic career change and purchased an outdoor catering unit with the intention to hone and further develop the skill of making a top-quality burger. I began selling flamed grilled food at markets and small events. My first adventure “The Smoke’N Grill House” had begun.

I focused on burgers and hotdogs using meat only produced in Ireland.  It didn’t take long for the quality to be recognised. Before I knew it, I was cooking at food festivals, sporting events and many more. Queues were developing as demand was high. This brought a different element to my business. My main concern when catering for large amounts of people was maintaining quality while trying to reduce the wait time for our customers. We upgraded equipment and introduced extra staff members. I have a fantastic team around me who together helped me achieve top quality standards at an effective speed ensuring quality wasn’t jeopardised. As a result of this, we catered for members of the Irish rugby team, VIP areas at Longitude music festival and the backstage VIP area of Slane Castle. We were stepping further in the right direction. Many years on and The Smoke’N Grill House has become a festival favourite. We attend the majority of major events in Ireland and Northern Ireland. As the Smoke’N Grill House is known for its flame-grilled food, I felt it was difficult to alter the cooking techniques. Customers have grown familiar with what The Smoke’N Grill House is. I decided to go back to the drawing board, the Burgertorium was born.

The Burgertorium allowed us to use a different cooking style. As I constantly strive to support local businesses, we prepare our burgers using meat from a local award-winning craft butcher along with our veg and additional products. Everything we use is 100% Irish. The creation of the Burgertorium has enabled us to produce a broader menu with some of our best sellers being “The Classic”, “The Chicken Boom!!”, “The Famous Irish Hotdog”, and “Fully Loaded Fries”. Our festival style approach gives a casual dining experience at a professional standard. The initial reaction to our Burgertorium style burgers has been fantastic. The feedback from our customers enables us to constantly refine our craft. We will also be on the road with our retro-style airstream so we have the opportunity to bring the Burgertorium to you around Ireland.
